Ingredients:
- 1 Short Rib Estância 92
- 1 head of garlic
- 1 teaspoon of truffle shavings
- 100g of salted butter, at room temperature
- 150g of al dente pre-cooked asparagus
- Salt to taste
- Black pepper to taste
- 2 tablespoons of olive oil for frying
Instructions:
Cut the top off the head of garlic and season with salt and pepper to taste.
Place truffle shavings over the garlic and wrap it in aluminum foil. Bake in a medium oven for about 30 minutes.
Remove from the oven, unwrap, and squeeze the cooked garlic with the truffles into a bowl.
Add room temperature butter to the garlic and truffles, mixing well until it forms a creamy compound butter. Set aside.
Next, heat a grill over medium heat and place the Short Rib. Grill for about 3 minutes on each side, or until desired doneness.
On the same grill, delicately place the pre-cooked asparagus. Sear for approximately 1 minute to heat through.
