The short rib is a juicy and flavorful cut of meat that has its roots in American grilling tradition. This cut is distinguished by its marbled texture and depth of flavor, making it a favorite among meat lovers worldwide. Ingredients:

  • 1 Short Rib Estância 92
  • 1 head of garlic
  • 1 teaspoon of truffle shavings
  • 100g of salted butter, at room temperature
  • 150g of al dente pre-cooked asparagus
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons of olive oil for frying

Instructions:

Cut the top off the head of garlic and season with salt and pepper to taste.

Place truffle shavings over the garlic and wrap it in aluminum foil. Bake in a medium oven for about 30 minutes.

Remove from the oven, unwrap, and squeeze the cooked garlic with the truffles into a bowl.

Add room temperature butter to the garlic and truffles, mixing well until it forms a creamy compound butter. Set aside.

Next, heat a grill over medium heat and place the Short Rib. Grill for about 3 minutes on each side, or until desired doneness.
