Ingredients:
- 1.5 kg of flat beef PUL
- Salt (to taste)
- Black pepper (to taste)
- 3 tablespoons of olive oil
- 1 chopped onion
- 3 cloves of garlic, minced
- 1 cup of tomato puree
- 1 bay leaf
- 3 carrots, diced
- 3 parsnips, diced
Preparation Method:
First, cut the flat beef PUL into large cubes and season with salt and black pepper to taste.
Meanwhile, heat a pressure cooker, add the olive oil, and gradually add the beef cubes. Sear the meat, turning it to brown on all sides. Then, remove the cubes from the pot and set them aside.
In the same pot, add the onion and garlic. Sauté for 2 minutes until they are slightly golden.
Next, add the seared meat back into the pot, then add the tomato puree, bay leaf, and cover with water. Close the pot and cook for 20 minutes, counting from the moment it reaches full pressure.
After 20 minutes, open the pot, add the carrots and parsnips. Cook the beef stew without pressure until the vegetables are tender and the broth has thickened.
Finally, finish the beef stew with chopped parsley and serve it with rice and farofa.
