Beef knuckle is a lean, flavorful cut with low fat content, and it’s often used in recipes that require ground beef. Lasagna Bolognese is one of the Italian cuisine classics that has conquered taste buds worldwide. This dish has collected fans and gained various adaptations around the globe.

INGREDIENTS
Bolognese Sauce:
- 1 kg of PUL ground beef knuckle
- 2 tablespoons of oil
- 1 medium onion, chopped
- 2 cloves of garlic
- 2 carrots, diced
- ½ bunch of cooked spinach
- 4 cans of peeled tomatoes
- Salt to taste
- Freshly ground black pepper to taste
- Chopped parsley to taste
White Sauce:
- 4 tablespoons of butter
- 3 tablespoons of all-purpose flour
- 1 liter of milk at room temperature
- Salt to taste
- Nutmeg to taste
Assembly and Finishing:
- 600g of pre-cooked lasagna noodles
- 400g of shredded mozzarella
- 100g of parmesan
PREPARATION:
Bolognese Sauce:
In a large saucepan, heat the oil over medium heat.
Add the onion and garlic. Sauté for 2 minutes or until softened.
Add the carrots and spinach. Cook for 5 minutes.
Add the ground beef knuckle and mix well. Cook for 15 minutes or until the meat is crumbly.
Add the peeled tomatoes, mix, and season with salt, freshly ground black pepper to taste. Cook over low heat for 30 minutes to enhance the flavors.
Finish with parsley and set aside.
White Sauce:
In a medium saucepan, melt the butter over medium heat.
Add the flour and mix well with a whisk. Gradually add the milk, stirring constantly to prevent lumps.
Season with salt, nutmeg, and cook for 5 minutes. Set aside.
Assembly and Finishing:
In a large baking dish, spread a little of the Bolognese sauce.
Add a layer of lasagna noodles, cover with ¼ of the white sauce, then Bolognese sauce, and ¼ of the mozzarella.
Repeat the process, finishing with white sauce, mozzarella, and parmesan.
Bake in a preheated oven at 180°C for 25 minutes or until golden brown.
Serve immediately!
