This eye round roast recipe combines the tenderness of the beef with the spicy touch of chipotle sauce, a smoked and dried jalapeño pepper originating from Mexico. The fusion of these flavors results in a juicy dish full of personality, perfect for special occasions.

Ingredients

For the Eye Round:

  • 1 cleaned eye round (approximately 1.7 kg)
  • 3 tablespoons soy sauce
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • 2 cloves garlic, chopped
  • 1 bay leaf
  • 1 sprig rosemary
  • 2 tablespoons salt
  • Ground black pepper to taste
  • 4 tablespoons olive oil
  • 6 potatoes, cooked al dente and cut into cubes
  • ½ bell pepper of each color, sliced

For the Sauce:

  • 1 pinch cumin
  • 1 pinch thyme
  • 1 teaspoon sweet paprika
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 medium garlic clove, crushed
  • 2 cups natural tomato sauce
  • 1/2 teaspoon chipotle hot sauce (adjust to taste)
  • 1 teaspoon water

Preparation

Marinade:

In a large plastic bag, mix the soy sauce, Worcestershire sauce, yellow mustard, chopped garlic, salt, ground black pepper, bay leaf, and rosemary.

Place the cleaned eye round in the plastic bag with the marinade, remove the air from the bag, and seal it well.

Shake the bag to ensure the marinade is evenly distributed over the eye round. Refrigerate for 12 hours.

Preparing the Beef:

  1. After 12 hours, remove the eye round from the refrigerator and discard the excess marinade.
  2. Heat a large skillet over high heat with a quarter cup of oil.
  3. Sear the eye round on all sides for about 15 minutes, turning carefully to avoid damaging the meat.
  4. Transfer the seared eye round to a rack set over a baking sheet. Place the cut potatoes and bell peppers on the baking sheet around the meat.
  5. Preheat the oven to 200°C (400°F) and roast for 15 minutes.

Sauce:

While the meat is in the oven, mix all the sauce ingredients in a saucepan.

Bring to a boil over medium heat for about 10 minutes, stirring occasionally.

Finishing:

Remove the meat from the oven and let it rest for a few minutes before slicing to the desired thickness.

Serve the sliced roast beef with the potatoes, bell peppers, and chipotle sauce.
