Ingredients:
Fish:
– 4 tilapia fillets
– 2 tablespoons of olive oil
– Salt (to taste)
– Black pepper (to taste)
Sauce:
– 1 red bell pepper
– 1 cup of tomato sauce
– ¼ cup of La Española Extra Virgin Olive Oil (62 ml)
– ⅓ cup of toasted almonds
– ½ teaspoon of smoked paprika
– ½ tablespoon of red wine vinegar
– 1 garlic clove
– Salt (to taste)
– Black pepper (to taste)
Instructions:
For the sauce:
First, start by charring the bell pepper over a high flame on the stove until all sides are roasted. Then, place the charred pepper inside a plastic bag and let it cool.
Once cooled, remove the charred skin and seeds from the bell pepper. Discard them.
Next, combine the pepper, tomato sauce, olive oil, almonds, paprika, vinegar, and garlic in a food processor until you achieve a smooth sauce. Then, season with salt and black pepper to taste. Set aside.
