Ingredients:

Pumpkins:

– 400g pumpkin, cut into cubes (pre-cooked)

– 1 tablespoon butter

– Salt to taste

– Ground black pepper (to taste)

– 2 tablespoons brown sugar

– 1 tablespoon vinegar

Mint Sauce:

– Mint leaves

– 1 cup olive oil

– Juice of half a lemon

– Salt to taste

Lamb Rack:

– Estância 92 lamb rack

– Salt (to taste)

– Black pepper (to taste)

– Leaves from 2 sprigs of rosemary

– 1 clove garlic, chopped

– 2 tablespoons extra virgin olive oil

Preparation:

For the glazed pumpkins: First, heat a non-stick skillet with the butter. Next, add the pumpkin cubes, season with salt and black pepper, and grill until they are lightly browned on all sides.

Then, add the brown sugar and vinegar, reduce the heat, and continue grilling until the pumpkins are shiny and slightly caramelized. Set aside.

For the mint sauce: Meanwhile, finely chop the mint leaves and mix them with olive oil, lemon juice, and salt to taste. Set aside.

For the lamb rack: Season the meat with salt, black pepper, rosemary, garlic, and olive oil. Then, place it on the grill, positioning it 20 cm away from the coals, and let it sear for 10 minutes on each side.

After that, remove the lamb rack from the grill, wait 5 minutes for the juices to distribute, and cut along the spaces between the bones.

If you prefer, return each chop to the grill for another 2 minutes (1 minute on each side) to get a final touch of flavor.

Finally, serve the lamb rack chops accompanied by the glazed pumpkins and mint sauce.
