Powerful, with a strong presence, and its name says it all: prime rib means “first rib,” considered the most tender and premium part of the rib. It is recommended to use little salt in its preparation so that you can taste the unique flavor of the cut.

In this week’s recipe, the suggestion is to indulge in light accompaniments such as sautéed Paris mushrooms in a mixture of red onions and balsamic vinegar.

INGREDIENTS

  • 1 Estância 92 prime rib cut
  • 750g of Paris mushrooms
  • 4 red onions, sliced into petals
  • 3 tablespoons of olive oil
  • 5 sprigs of thyme
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons of balsamic vinegar

PREPARATION:

Season the meat with salt and freshly ground black pepper to taste.

Grill or pan-fry until it reaches the desired doneness.

Arrange the mushrooms and onions on a baking sheet. Add the thyme sprigs and drizzle everything with 3 tablespoons of olive oil.

Bake in the oven for about 1 hour or until golden brown.

Remove the baking sheet from the oven, drizzle the mushrooms and onions with balsamic vinegar, and mix well.
