Ingredients:
- 1kg of eye round Pul
- Salt (to taste)
- Black pepper (to taste)
- 3 tablespoons of olive oil
- 1 bay leaf
- 2 tablespoons of butter
- 1 chopped onion
- 3 minced garlic cloves
- 1 carton of heavy cream
- 1 cup of white wine
- 200g of sliced mushrooms
- 1 sprig of thyme
Preparation:
First, season the eye round with salt, black pepper, and olive oil.
Heat a pressure cooker, add olive oil, and sear the eye round, turning it to brown all sides.
Then, add the bay leaf and enough water to cover the eye round. Close the cooker and cook for 30 minutes after it reaches pressure.
Carefully open the pressure cooker and check if the meat is tender. If needed, add more water and cook for a few more minutes under pressure.
Remove the eye round from the pot and set it aside.
In the same pot, add the butter, heat it, and sauté the onion, garlic, and a pinch of salt until the onion softens.
Next, add the wine, heavy cream, sliced mushrooms, and the thyme sprig. Cook until it starts to boil and thickens slightly.
Finally, slice the eye round and serve it with the sauce on top.
