Tri-tip is an extremely tender and juicy meat, also known for its versatility in preparation. In our recipe we prepare the cut accompanied by a zaatar crust, a condiment widely used in Middle Eastern cuisine, composed of sesame and equal parts of ground thyme, oregano and marjoram.
With a wheat and dried fruits salad, it adds balance and accentuates the flavors of the food. Follow the step by step.
Ingredients:
Tri-tip with zaatar
- 1 cut of Frigomerc Tri-tip Selection
- Salt to taste
- Ground black pepper to taste
- 1 tbsp. cumin
- 2 garlic cloves, chopped
- 2 tbsp. Alma Lusa Olive Oil
- 4 tbsp zaatar
Wheat Grain Salad:
- 2 cups (tea) wheat grain
- 1 red onion, cut into small cubes
- 100g apricots, chopped
- 100 g chopped dates
- 100 g raisins
- 100g walnuts, chopped
- Juice of 1 lemon
- ½ bunch mint, chopped
- ½ cup (teacup) Alma Lusa olive oil
- Salt to taste
- Ground black pepper to taste
Preparation:
Wheat Grain Salad:
Place the wheat grain in a medium saucepan, cover with water and heat over medium heat for 35 minutes or until cooked.
Drain the water and place in a medium bowl.
Add the red onion, apricots, dates, raisins, lemon juice, mint and drizzle with olive oil.
Season with salt and pepper. And mix well.
Transfer to the refrigerator and set aside.
Roasted Tri-tip with zaatar
In a medium roasting pan, place the tri-tip and season with salt, black pepper, cumin, garlic and olive oil.
Mix well and marinate for at least 1 hour.
Cover with aluminum foil and bake in a preheated oven to 180°C for 1 hour.
Remove the foil and place the zaatar on top of the tri-tip, forming a crust.
Put it back in the oven for another 10 minutes.
Serve immediately with the wheat grain salad with dried fruits.
