The cut is extracted from the ribs of the rear and front of the cow in a direction transverse to the bones and gained its name from its strip-like shape between the bones and the meat.

INGREDIENTS
- 1 package of strip loin roast Estância 92
- 1 kg of cooked cassava
- Bottled butter to taste
- Salt to taste
- Coarse salt to taste
- Green onions to taste
PREPARATION:
For the strip loin roast, season the meat with coarse salt and grill it until it reaches the desired doneness.
In a skillet, distribute the bottled butter to taste and grill the cassava for 3 minutes on each side or until golden brown.
If desired, you can serve it with melted bottled butter on the side and chopped green onions.
