Short rib is a cut located in the front part of the rib. Characterized by its bone, it has a high level of marbled fat, which gives a distinctive flavor to the cut. With thick, long fibers, it is best prepared roasted or grilled.

INGREDIENTS:

  • 1 short rib Estância 92
  • 20 vine tomatoes
  • 20 mini onions
  • 1/4 cup of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt to taste
  • Black pepper freshly ground to taste
  • Fresh oregano to taste
  • Coarse salt to taste

PREPARATION:

Season the meat with coarse salt and freshly ground black pepper to taste. Grill until desired doneness.

Preheat the oven to 180°C (350°F). Meanwhile, arrange the tomatoes and onion in a baking dish. Drizzle with olive oil, balsamic vinegar, and salt to taste.
