The Estância 92 chuck rib is a premium cut, ideal for a Saturday night dinner. It stands out for its tenderness and juiciness, providing an incredible meal.

To accompany it, we’ve selected a brandy sauce preparation, enhancing the dish’s flavor.


1 Estância 92 chuck rib
2 tablespoons of olive oil
1 cup of brandy
1 cup of apple cider vinegar
1 cup of tomato sauce
1/2 chopped onion
2 cloves of minced garlic
2 tablespoons of Worcestershire sauce
Salt to taste
Black pepper, ground, to taste


Season the chuck rib with salt and black pepper. Wrap it in aluminum foil and bake in the oven for 2 hours.

While the rib is baking, prepare the sauce. Begin by sautéing the onion and garlic with the olive oil for 2 minutes or until golden.

Next, add all the ingredients and mix well. Let it thicken over medium heat.

Remove the aluminum foil from the rib and brush the sauce over the entire rib. Bake for an additional 15 minutes.

To finish, serve with your preferred grilled vegetables.
